INGREDIENTS

Bread

  • 2-1/2 cups all purpose flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs, large
  • 3/4 cup vegetable oil
  • 2 tsp grated orange peel
  • 1 cup buttermilk
  • 1-1/2 cups chopped cranberries, fresh or frozen (thawed)
  • 1 cup miniature chocolate chips
  • 1 cup chopped walnuts

Glaze (optional)

  • 3/4 cup confectioner's sugar
  • 2 tbsp orange juice

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, combine first 5 ingredients.
  3. In another bowl, combine eggs, oil, and orange peel; mix well.
  4. Add to dry ingredients alternatively with the buttermilk.
  5. Fold in cranberries, chocolate chips, and walnuts.
  6. Pour into 2 greased 8"x4"x2" loaf pans.
  7. Bake for 55-65 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool for 10 minutes before removing from pans to wire racks.
  9. If adding glaze, combine confectioner's sugar and orange juice until smooth; spread over cooled loaves.
